This an awesome recipe that you'll want to use for your next holliday part!

 serves 4

 

Ingredients:                                                                                          

4 medium sized artichokes

4 cloves of garlic, sliced into fourths

1 cup of feta cheese

2 lemons, halved

1 cup of Extra-Virgin Olive Oil

2 tablespoons of Kosher salt

Fresh ground pepper, to taste


Directions: 

Preheat oven to 425 degrees.

Take your artichokes and trim off the stems. Next, cut about 1/3 off the top. Set the artichokes stem side down.

Loosen up the center leaves and and place 4 garlic slices between the leaves of each. Set each artichoke onto separate pieces of heavy duty foil. 

Onto each artichoke, drizzle ¼ of the olive oil, and squeeze lemon half over top. Next, sprinkle each with ½ a teaspoon of salt, and the ground pepper.

Wrap the artichokes securely in the foil squares and place on a rimmed baking sheet. Roast the artichokes for about 45 minutes.

When finished, unwrap the artichokes and top each with ¼ cup of feta cheese. Place back in oven, uncovered, for 5 minutes or until cheese is melted.
